南蛮漬け

素揚げした魚介類や鶏肉や野菜を、唐辛子やネギの入った甘酢に付けた料理。魚介類では、アジ、ワカサギなどがよく用いられ、長く漬け込むと骨まで食べられる。四百年以上前の日本ではポルトガルやスペインを南蛮と呼んだ。洋食のように油で揚げ、香辛料を使うことから南蛮漬けと呼ばれるようになったといわれる。

Deep-fried seafood, chicken, and vegetables marinated in vinegar sauce with chili peppers and green onion. Common ingredients are jack mackerel and Japanese smelt, and bones may be eaten if marinated for a long period of time. Portugal and Spain were called “nanban” in Japan over 400 years ago. It is said to be called “nanban-zuke” as it is deep-fried in oil and seasoned with spices like western dishes.
